Freeze Dry and Reconstitute Steak

Preserving steak through freeze drying is an innovative method that maintains its flavor and nutrition effectively. Properly sealed, freeze-dried steak can retain quality for up to 25 years, making it an ideal choice for extended camping trips or long-term food storage. Its lightweight and compact nature post-drying simplifies transportation and storage significantly.

Process of Freeze Drying Steak

Today, we're demonstrating how to freeze dry raw steak using the Stay Fresh Standard freeze dryer. Here’s a straightforward guide to preparing and preserving steak:

  1. Preparation of Steak:

    • Choose thinner cuts of steak for the best results. While thicker slices can also be freeze-dried, they require more time to both dry and rehydrate effectively.
    • Pat the steaks dry using a kitchen towel to remove excess blood or liquid. This helps in achieving a more uniform dry.
    • Trim off excessive fat. Fat does not freeze dry well and can affect the preservation quality over time. Removing fat is particularly important if the steak is intended for long-term storage.
  2. Freeze Drying Process:

    • Place the prepared steaks on trays and load them into the freeze dryer.
    • Set the freeze dryer to the automatic cycle. This setting is designed to handle the process without needing manual adjustments, making it user-friendly even for beginners.
    • Let the freeze dryer run its course. The machine will manage the necessary conditions to ensure optimal drying.
    • For thicker steak slices, consider adjusting the final dry time to ensure they are dried thoroughly.
    • After drying is complete, check if there are any cold spots on the steaks. The steaks should be warm.  Steaks with cold spots should be put back in the freeze dryer for extra final dry hours. 
  3. Post-Drying Storage:

    • Seal the steaks in mylar bags to protect them from moisture and air exposure.
    • Ensure the bags are sealed tightly to maintain the quality and extend the shelf life of the dried steaks.
    • Use oxygen absorbers to inhibits oxidation, which leads to rancidity and flavor deterioration. 
  1. Reconstitution and Cooking:
    • Freeze-dried steak provides a unique opportunity for culinary experimentation during the reconstitution phase. Since freeze drying extracts nearly all the water content, the steak can fully absorb the flavors of any liquid used for rehydration.
    • In our experiment, we rehydrated two pieces of steak: one in warm water and the other in warm vegetable soup with rosemary. We allowed them to soak for one hour, then cooked them as usual. The steak rehydrated in water tasted very similar to freshly cooked steak, maintaining its original flavor. Meanwhile, the steak rehydrated in vegetable soup with rosemary absorbed the herbal and vegetable notes, resulting in a flavorful and aromatic dish. This experiment highlights the versatility of freeze-dried steak in adapting to different flavors and cooking styles.

Freeze drying steak is a practical solution for anyone looking to combine the culinary enjoyment of quality meat with the convenience of long-term storage and ease of transport. Whether you're preparing for a wilderness adventure or simply planning your food storage strategy, freeze-dried steak is a versatile and beneficial choice.

In this experiment we used a 4 tray system. It is more productive to freeze dry steaks in a 7 tray system, because of the shape, and relatively low moisture content.
