Which one do I need?

The honest answer is batch size and the kind of food you dry most.

Compare all seven models

Every machine shares the same patented algorithm, the same four per-recipe settings, the same candy mode and the same warranty. These are the differences.

The motorized ball valve, vacuum release valve, stainless steel drain line and food temperature probe are fitted from the 5-Shelf up; the Small is built more simply and uses its 7 × 15.5 in trays, for which mesh, dividers and parchment are not made. Full specifications.

Will it fit?

Five cabinet sizes, drawn to scale. The Small is the odd one out twice over: it is the widest machine here and by far the shortest, and because it takes its cooling air in at the back it is the only one that needs 12 in of clearance on one flank instead of both.

The 5-Shelf and the 7-Shelf are the same cabinet. Two extra shelves go inside the chamber you already have — the drawings below show the tighter stack — so stepping up from five to seven costs you no floor space at all.

Small 26.7 in wide
17.3 in tall4 shelves
5-Shelf 20 in wide
31 in tall5 shelves
7-Shelf 20 in wide
31 in tall7 shelves
Large 22 in wide
34.5 in tall6 shelves
Mega 25.25 in wide
37.5 in tall6 shelves
Model Cabinet W × D × H Width over fittings Bench width to allow Weight Circuit
Small 26.7 × 18.5 × 17.3 in 30.7 in 42.7 in 100 lb 15 A
5-Shelf 20 × 26 × 31 in 24 in 48 in 165 lb 15 A
7-Shelf 20 × 26 × 31 in 24 in 48 in 170 lb 15 A
Large 22 × 29 × 34.5 in 26 in 50 in 224 lb 20 A
Mega 25.25 × 33.5 × 37.5 in 29.25 in 53.25 in 268 lb 20 A

Weights are the machine alone — the vacuum pump adds another 36 lb (Premier), 55 lb (Commercial) or 62 lb (Mega Commercial), and it stands beside or below the machine rather than on it. Width over fittings is the cabinet plus roughly 2 in. of port on each side: on the 5-Shelf, 7-Shelf, Large and Mega that is the KF25 vacuum port on the upper left and the drain line on the lower right. Bench width to allow adds the clearance needed for airflow on top of that. Those four draw cooling air in on the left flank and exhaust it on the right, so they need 12 in. on both sides — and keep the left-hand intake away from ovens, radiators and other machines, because feeding the condenser warm air costs you drying time. The Small is the exception: it takes air in at the back and discharges at the front, so it needs 12 in. on the right only — that is where the vacuum pump stands and where the machine sheds its heat — and nothing beyond the port projection on the left. The Small, 5-Shelf and 7-Shelf run on an ordinary 15 A household circuit; the Large and Mega need a dedicated 110 V 20 A circuit with a NEMA 5-20 outlet.

Every number here comes from the Specifications table in the matching user manual. The specifications page has the rest. The Small's manual is in preparation; its figures come from our product engineering.

Premier or Commercial pump? Both move 7.2 CFM, so drying speed is the same. The Commercial is the heavier industrial pump — 55 lb against 36 lb, with an oil demister — built to run batch after batch. On its own it sells for $1,295.

The Small ships with a Premier pump, and the Large and the Mega with a Commercial pump only. On the 5-Shelf and 7-Shelf it is the upgrade choice.

Why choose Stay Fresh

We back the machine long after you have paid for it

Anyone can print a specification sheet. These are the things that decide whether you are still happy with your freeze dryer in year five.

Lifetime Free technical supportNo expiry date, no paid tier. Call the people who engineered it.
100% Batch-tested before shippingA full freeze-drying cycle on your actual machine — not a function test.
60 days To change your mindTwice the industry standard, because two months is long enough to be sure.
Simple for beginners, open for experts Freeze Drying → Start and the machine handles it. Or take the control a laboratory freeze dryer gives you: shelf chill, target vacuum, shelf temperature, final dry.
Nothing hidden before you buy The complete manual for every model is a free download, troubleshooting tables and all. Specs, ratings and reviews are published where you can check them.
Candy that actually works Candy mode is a real process, not a label on a button, and the shelf runs to 180°F when a candy needs it — on every machine we build, the Small included. We test candies ourselves and publish the settings that worked — including the ones that never will.
Dry by temperature, not the clock RTD sensors in every machine, plus an optional standard, needle or pad probe†, so a batch finishes on what the food is doing rather than an estimate.
Pump oil never reaches your food A motorised ball valve† closes the vacuum line whenever the pump is not pulling, so oil mist cannot drift back into the chamber.
Standard fittings, not proprietary ones A KF25 vacuum flange†, the fitting laboratories already use, so hoses, clamps and gauges are ordinary stocked parts rather than something only we sell.
Built to be repaired Relays, compressor, PLC, touch screen and probes are serviceable items, not sealed assemblies. We would rather sell you a relay in year six than a new freeze dryer.
Ready on day one Impulse sealer, 50 mylar bags, oxygen absorbers, trays and an oil filter in the box, plus a 125-recipe book that lists the settings each one was developed with.

† Fitted from the 5-Shelf up. The Small Freeze Dryer is built more simply; the specifications page lists exactly what each model carries.

Before you buy

What kind of outlet does it need?

The Small, the 5-Shelf and the 7-Shelf all run from an ordinary household circuit — a dedicated 15 amp circuit is recommended on the Small, 15 or 20 amp on the 5-Shelf and 7-Shelf. The Large and the Mega need a dedicated 110 V 20 amp circuit with a NEMA 5-20 outlet, so check that before ordering — it is the one piece of preparation that catches people out.

How long does a batch take?

About 12 hours for 5 lb of food on the Small. Main drying runs 16 to 30 hours for about 8 lb on the 5-Shelf and 7-Shelf, and 20 to 40 hours for 20 lb on the Large and Mega. Lowering the target vacuum gives a gentler cycle and a better-looking result, but takes considerably longer.

How much room does it need around it?

The 5-Shelf, 7-Shelf, Large and Mega are air cooled left to right: they draw air in on the left and push it out on the right, so leave 12 in. clear on both sides and keep heat sources away from the left-hand intake. Add roughly 2 in. to the cabinet width for the vacuum port and drain line.

The Small breathes back to front instead, so it only needs its 12 in. on the right, where the pump stands. That is what lets it sit in a run of counter rather than out in the room: allow about 42.7 in. of bench for the machine and its clear side, and 22 in. of depth including the door and knob.

Will the Small really sit on a kitchen counter?

Yes — that is what it was designed for. It is 17.3 in. tall, which clears the underside of most wall cabinets, 26.7 in. wide and 100 lb, and it takes its cooling air in at the back and discharges at the front, so it can live against a wall with a clear foot on its right-hand side. It does 6 to 10 lb of food a batch across four trays.

It is the only machine in the range built that way. Everything from the 5-Shelf up is a floor-standing cabinet that breathes side to side and wants 12 in. clear on both flanks.

What comes in the box?

Every machine ships with an oil filter, a 12 in. impulse sealer, mylar bags, oxygen absorbers and a set of trays. The 5-Shelf and 7-Shelf also include a pack of silicone mesh. You will be emailed the Stay Fresh recipe book — 125 recipes across 11 chapters, each with the target vacuum, shelf temperature and final dry time to use — once your order ships.

The Small's four trays are a size of their own at 7 × 15.5 in., so the mesh, divider and parchment sets made for the larger machines do not fit it.

What can I actually freeze dry — and does anything not work?

Fruit, vegetables, meat, dairy, full cooked meals and candy all work. A few things need preparing first: blanch grapes and broccoli, because raw grapes come out as raisins and raw broccoli shrivels, and pierce or slice blueberries and cherries or they burst. Delicate greens prefer a low shelf temperature and a low target vacuum. High-sugar fruit wants a longer final dry, and watermelon wants a very long one.

The things that genuinely do not work are pure chocolate, Starburst, jelly beans, Sour Patch Kids and most hard candies — Jolly Rancher hard candy is the odd exception that does. Store-bought frozen sliced fruit tends to shrivel, and canned pineapple is never great.

The recipe book that comes with every machine covers 125 foods across 11 chapters, each with the settings it was developed with.

How much do I need to understand to get a good result?

Very little, to start. The patented drying algorithm reads the chamber and adjusts rather than running a fixed timer, and the defaults — 550 mTorr, a 120 °F maximum shelf temperature and a seven-hour final dry — handle most food without you changing anything. Load the trays, press start, do the weight test at the end. That is true of every model, the Small included.

When you do want to intervene there are four settings: shelf chill temperature, target vacuum, maximum shelf temperature and final dry time. The rules for using them are short. If the food shrivels while it dries, lower the target vacuum. If it is not finished when the machine says drying is complete, lengthen the final dry. If it is thick, delicate or high in sugar, lower the shelf chill or use a probe. A lower target vacuum always means a gentler cycle, a much longer run and a better-looking result.

Can it do freeze-dried candy?

Yes, and candy mode is built into every model — a dedicated process, not just a hotter setting, with the shelf running to 180 °F when a candy needs it. Most candies work somewhere between 150 and 160 °F, though each one has its own best setting and a few — pure chocolate, Starburst, most hard candies — do not freeze dry well at all.

What is the difference between this and a Harvest Right?

The closest practical differences are the patented drying algorithm, the 180 °F shelf ceiling for candy, the motorised ball valve that keeps pump oil out of the chamber, the vacuum release valve, zoned heating on the Large and Mega, and the fact that the machines are engineered and serviced in California. We lay out the full side-by-side — capacity, pumps, pricing, warranty, returns and support — on one page: Stay Fresh vs Harvest Right.

The ball valve and the vacuum release valve are fitted from the 5-Shelf up; the specifications page lists what each model carries.
