Freeze drying cold pressed juice

  2. Setting Up the Freeze Dryer:

    • Load the trays into the freeze dryer.
    • Close the vacuum valve, drain valve, and close the acrylic door.
  3. Configuring the Freeze Dryer Settings:

    • From the main screen, select 'FreezeDrying'.
    • Enter 'Settings' to adjust the freeze dryer for optimal results.
    • Lower the maximum shelf temperature from the standard 120°F to 100°F. This temperature adjustment is crucial for preserving the fragile nutrients in the juices, reducing nutrient loss from excessive heat, and preventing bubbling during drying.
    • Press 'Back' to return to the freeze drying start screen.

  4. Post-Processing:

    • Once the cycle is complete, carefully remove the freeze-dried juice from the trays. Note that strawberry and carrot juice become crunchy blocks.  The beetroot and celery juice bubbled a bit and are still a bit sticky, but they are actually very dry. They are sticky because of the sugar. When they are cooled to the room temperature in the mylar bags they become crunchy. 
    • Immediately seal the powdered juice in mylar bags or airtight mason jars. It’s advisable to package the powder in smaller quantities; once opened, the powder can absorb moisture from the air and spoil quickly if not stored properly.
