For this demonstration, we’re using Costco frozen raw shrimp, so we will be using the Frozen Food Mode for an automatic freeze drying cycle.
Step-by-Step Guide

Preparation
- Ensure there is no moisture in the food chamber or drain line before starting.
- Load empty trays onto the shelf unit.
- Close the acrylic door, vacuum valve, and drain valve to create an airtight environment.

Pre-Chilling the Trays
- On the main screen, press ‘Freeze Drying’.
- Press ‘Frozen Food’ to activate Frozen Food Mode for pre-chilling.
- Press ‘Start’, and the machine will begin pre-chilling the trays.

Loading the Shrimp
- Once the shelf temperature reaches 0°F, open the acrylic door and quickly spread out the frozen shrimp onto the trays.
- Close the acrylic door properly.
- Press ‘Food in Chamber’ to let the freeze dryer know the food has been loaded.
- The machine will then automatically manage the entire freeze drying process.

Finishing & Packaging
- Once the cycle is complete, open the vacuum valve slowly to let in air.
- Open the acrylic door and carefully remove the trays.
- Immediately pack the freeze-dried shrimp into airtight mason jars or mylar bags to protect against moisture.
Does Freeze Drying Change Raw Shrimp?
After freeze drying, the shrimp may appear slightly red—but don’t worry, it is still raw. When rehydrated in water, the shrimp will return to its original grey color before cooking.
Once reconstituted, the shrimp regains its firm texture and fresh taste. You can cook it just like fresh shrimp, and the difference between freshly bought shrimp and freeze-dried shrimp is almost indistinguishable.
