For this guide, scrambled eggs, egg whites, and egg yolks were freeze-dried separately to demonstrate how each component preserves during the process.

Step 1: Prepare the Eggs

  • Scrambled Eggs: Crack the eggs, whisk well, and pour them directly onto the freeze dryer tray.
  • Separated Eggs: Separate the egg yolks and whites into different trays.

As shown in the image:

  • Tray 1: Egg yolks
  • Tray 2: Egg whites
  • Tray 3 & 4: Scrambled eggs

Step 2: Load the Freeze Dryer

  • Ensure no moisture is present in the freeze dryer chamber or drain line.
  • Insert the shelf unit and load the trays.
  • Properly close the acrylic door, vacuum valve, and drain valve.

Step 3: Use the Temperature Probe for Thick Liquid

Since eggs are dense, Probe in Use mode is recommended to ensure that the center of the food is completely frozen before vacuum pressure is applied. This prevents incomplete freezing that could affect drying efficiency.

  • Connect the temperature probe and insert it into the deepest part of the food.
  • Secure the probe firmly so it doesn’t pop out during the process.

Step 4: Start the Freeze Drying Cycle

  • On the main screen, press ‘Freeze Drying’.
  • Select ‘Probe in Use’ to activate temperature-based drying control.
  • Press ‘Start’ to begin the automated cycle.

Post-Processing: Blending for Better Storage and Reconstitution

After freeze drying, it is recommended to blend the egg whites and scrambled eggs into powder before packaging.

  • Add blended egg powder to a bowl.

  • Result: The scrambled eggs taste identical to fresh eggs, with a fluffier, creamier texture.

2. Whipping Egg Whites

  • Add freeze-dried egg white powder to a bowl.
  • Add just the right amount of water (too much will ruin the texture).
  • Whip as you would fresh egg whites.
